I continue to reel from the toe injury I got about three days ago now.
I’ve been icing the area and around it for the last two days or so and I’m still not finding much relief. I’m afraid I might have broken it.
Which is a drag because it’s not like breaking another toe, in which a doctor visit is rarely required. Sigh, it’d be just my luck if I did break it, man, I don’t want to have to deal with seeing a doctor again.
But if it doesn’t let up, then I really might not have a choice in the matter.
EASY HEALTHY VEGAN CHICKPEA AND CARROT TUNA SALAD RECIPE - PERFECT PACKED LUNCH
This is the easiest recipe ever and absolutely delicious. The hardest part is getting hold of vegan mayonnaise. All you need is:
- 2 carrots
- 1 can of chickpeas
- 2 tbsp of vegan mayonnaise
Throw the carrots and chickpeas into the food blender and blend until you have small chunks, resembling the texture of tuna. Add two big dollops of vegan mayonnaise and salt, pepper and lemon juice to taste. And that’s it.
I love having this on wholegrain bread with spinach or slices of cucumbers. Perfect for a packed lunch. Enjoy!
